Substitute is a restaurant designed out of necessity, not need, an interactive dining experience that caters to those with dietary restrictions. It celebrates reworking meals to aid those with specific food requirements. Situated on Broadway, Newmarket, the restaurant embraces connection through open dining areas and an interactive kitchen.

Nestled in the lower level of the building is a communal learning kitchen. Cooking classes are tailored to those wishing to deepen their understanding of how food can help remedy and alleviate ailments or symptoms associated with various health issues. The space is set in an open plan utilising shared amenities. The learning kitchen not only connects people with how their food is made, but connects them to one another, building bonds over shared experience. Substitute and The Learning Kitchen are places where customers can come and not feel worry about needing assistance, or asking questions.
